Possibly because they wanted to rush it out maybe, who knows.
The only reason why Sakurai said is because of the "cutscenes".
I'd rather have them add a SP mode than making a downgraded mess that is Smash bros 3DS.

Not having a SSE-like mode most likely had nothing to do with rushing the game release. It is not like Sora was the only studio working on the title, afterall. The game was delayed twice (for WiiU) so that is likely not the reason. The more likely reason why is probably because they did not want to make the WiiU version too drastically different from the 3DS version. That or size limitations. SSE was demanding in disk space considering all the other content that goes into a Smash game (it was reportedly the reason Smash Bros. Brawl was dual layered). Also, we should consider technical limitations; deciding on the 60fps/1080p meant that trying to make a SSE type mode may not work with those benchmarks or that drastic compromises would have to be made which exploited Wii U in a negative manner.
A lot of people did not like SSE. I do not believe it had any impact on Sakurai's decision making as it was reportedly decided before pre-planning that there would not be a sequel to SSE in Smash 4. With that said, there were many within the vocal community that did not even want to play through SSE. It was OK, but most definitely not something the community came close to unanimously agreeing upon. There were so many people that thought of it as a waste of time and without any voiceovers, the storytelling became convoluted. Therefore, SSE was too limited to be engrossing. Honestly, most of the voal community's issues would likely never be addressed in a new version of SSE since Nintendo does not like most of their characters to speak which would again limit the way the story would unfold. Also, there were sections that gamers just found unfun.
Personally, I miss coin launcher.
I think Smash 4 is the best for the competetive fighting scene. I think the Smash community is really blowing their chance (2-stock instead of 3-stock in singles is garbage as fuck) with this title but Smash 4 is the best and most balanced title in the franchise (about 25 or so characters can legitimately make deep runs at Nationals). I am growing too old for the Smash community and their ways but as far as the best title in the franchise is concerned (and I only think about it from a competetive aspect), Smash 4 is a high point that I doubt a new Smash title could top.
