Only Wii U titles have been very ambitious, at least in the beginning.
Mario Kart was amazing with not only it's antigravity aspect, and them adding players and tracks from different series. I would challebge you to play the F-Zero course and not have a smile on your face.
Splatoon is a new Ip and has become a phenomenon. If you tell me you cannot see how much time and effort has been put into literally every aspect of the game then I can see why you're upset with the Wii U.
Smash Bros has its biggest and best roster it has ever had hands down. This installment also has online tournaments and stage creators, and it hits a lot of the right strides in the competitive scene as well. It is also a hell of an ambitious game.
They took a chance with Platinum games and created a new IP with Wonderful 101. With its flaws it is still an incredibly ambitious title, and one of the best platinum titles released this gen.
Pikmin 3 is pretty much a visual masterpiece, and is easily one of the best looking games with a realistic style you will find on Wii U, or any similar hardware. It also has great level design and you would be hard pressed to find a more polished game.
Hyrule Warriors is also a very ambitious collaboration which you can ask anyone pretty much surpassed peoples expectations with its content.
Xenoblade X feels like it's most ambitious Wii U game to date, possibly even edging out LoZ BOTW, due to it adding in useful gamepad functionality. Nothing felt cheap or phoned in on that title, and hopefully it's the first in a long prosperous game series.
Last, Mario Maker is another game that is obviously a serious ambitious undertaking. Trying to get that gamento work as smoothly as it does seems like a hell of a task.
You can add in the chances they took and money they spent on Bayo 2, Fatal Frame, and Tokyo Mirage Sessions or not, but those were also huge risks which at least paid off in satisfaction of the people who played them.
Seems kind of strange to say they haven't been ambitious due to having a 3D Mario you didn't care for, a Zelda that obviously ambitious as hell but "doesn't count", and no Metroid.
