The only games up there for gen 8 that are actually original so far are Hyrule Warriors (spin off) and TriForce Heroes (NOT a spin off). You know ALBW is just a retelling of ALTTP, canon or not, that's practically what it is.

And yet, so far it still feels like this is the first generation without any (new/original) Zelda at all.
Not really because they're all remakes. As far as home consoles, so far, this generation hasn't even had one Zelda game.
And you'd think that's a good thing. But it wasn't. 
Most are remasters which were hit and miss and of the two original games released so far one is so absolutely terrible it brings the whole package down. It all depends on Zelda U whether or not this was the worst Zelda-generation.
You miscounted some stuff, though it wouldn't change the end conclusion; LA is a 4th Gen game on GB (DX was a rerelease on GBC), there's two Four Swordses (one comes with the ALttP port on GBA though) and there's releases of the NES Zeldas on the GBA. There's also Tingle on DS and the rerelease of Four Swords on DSi/3DS though that was digital only.

Unfortunately, I think it's a one generation thing. Doubt it will continue with the NX, though I hope I'm wrong.
I suppose the remakes distort that a tad, but I'm still impressed that they pump out that many games without a drop in quality. I've really enjoyed them all and, while Triforce heroes didn't impress the heck out of Metacritic as most zelda games do, I really enjoyed it myself.
I've yet to begin suffering zelda fatigue... Not sure it's possible. :)
I don't really got a problem with that.
Some of these remakes/remasters needed to happen, since they're surely getting old and I think newer players would benefit from these.
As for the actual new titles, they have been pretty good. ALBW was an excellent game, Triforce Heroes was a neat idea and I'm glad the defs are still trying to be creative with the IP, and Hyrule Warriors was an interesting spinoff to try. Can't wait for Zelda U to join that list.
