FFVIII, Chrono Trigger, Fallout 3, Oblivion were all pretty great imo. Tbh most Final Fantasy games have good openings.

If there's one thing Final Fantasy VIII did right, it's the intro. It did cheat by mashing together scenes from other cutscenes but I mainly love it thanks to Liberi Fatali which is one of my favorite Nobuo Uematsu tracks ever.
