In terms of genres, we are missing stealth/fighting/driving sim/first person shooter/puzzle/mmo/3d platformer and more. Not only that, but some of those games you mentioned are not heavy hitters. Star fox zero does not look promising. Mario party has gone downhill for most (including me) with the inclusion of the car mechanic. I have never had the slightest idea of fatal frame's existence and would rather buy zombiu first at a cheaper price than fatal frame. Splatoon I just don't find too special to warrant $60.

Simply buying majoras mask has me at more 3ds games that I bought than the wii u. Not to mention upcoming games (includes monster hunter and paper mario/mario and luigi).
Ideally, you want all the games you buy to be heavy hitting, jam packed, and fun. That's why it matters.
Quantity is a huge issue, but when you are missing 10 genres, I wouldn't really call that list varied more so than I would lacking. Having a varied list implies having a variety of options. where's my driving sim? where's the stealth game? wo on so forth.
splatoon is a shooter at it's core. Just like I don't consider gta a racing game despite it's driving segments.
NSMBU was decent, but at least it didn't come after the fatigue of platformers set in. The wii u has been bombarded with so many platformers that it actually becomes a negative for future platformers on the system.
sorry, but star fox still looks bad in my opinion. I was expecting a console star fox to wow me with impressive looking worlds, the likes of xenoblade chronicles or pikmin 3, but so far the setting looks pretty abysmal (even for a wii u game)

That is not new footage, we already seen that in the treehouse, I made a thread about how beautifull it looks Titania in this game, but people still thinking on Corneria. That is still the half year old build of the game that they presented on the E3, i´m pretty sure the graphics have improved by now.

Well, most Wii U owners happen to like platformers (Yoshi's Woolly World, Super Mario Maker).
If you like futuristic racers there's also Fast Racing Neo. Although that's probably not published by Nintendo, but still exclusive.
Yoshi's ok, but I've too many platformers alredy. As for Super Mario Maker, I just don't like creating stages myself, it's more or less the same reason why I never tried RPG Maker.
And yes, I plan to buy Fast Racing Neo on day one, the digital only thing doesn't bother me when it's indie games, big publishers going that route on the other hand pisses me off to no end, as an example, while I'm willing to pay $ 20 or more for Fast Racing Neo, Fatal Frame V isn't worth more than $ 2 for me now, and I don't plan to buy it until it hits that price. I didn't include Fast Racing Neo because I too don't think that it's going to be published by Nintendo, there are more exclusives that interest me (Rodea, Stella Glow, The Legend of Legacy) plus some that I still need to get (Etrian Odyssey 2, Lord of Magna, LBX)

I buy the games when I needed to unless I'm super hyped. So overall, I'm okay with what I have for my Wii U as I haven't finished the games, same case with 3Ds.
Currently playing/grinding Fire Emblem: Awakening, hence I'm fully focused on that game.
