Game way ahead of its time in lot of things, with few problematic design choices that would be easily fixed in remake.

Final Fantasy IX, Chrono Cross, Digimon World, Koudelka, Crash 3 Warped, Dino Crisis, Parasite Eve

Vandal Hearts, Return Fire, Wing Commander, Transformers Armada (with multiplayer this time :D)

I would say Xenogears & Suikoden, but the anime style of graphics still hold up ok and are part of its charm.

System Shock 2 would make a great remake.
