I find the Mario Galaxy stage to be particularly gorgeous. Battlefield, Final Destination & the Xenoblade stage are amazing as well.

I can concur that Battlefield is pretty; I can't find a good pic of it, but when the sun sets and god rays stream through the buildings in the background, it looks stunning.
