The most important thing they'd need to do, I think, would be to make every single change they make to the game optional. Some people may want a game that is a modern update, while others may just want a more fine-tuned version of the original. The best thing, then would be to make each individual change something the player can turn on or off. As for what those changes might be...
-Skippable cutscenes
-Auto-run
-Tool-tips
-Auto-save
-Remove glitches/exploits
-Original/updated soundtrack
-Original/updated graphics
Finally, I'd like to see a new game mode that actually made changes to the original mechanics. A more robust materia system, retooled weapons, more challenging enemies, and maybe some added story content.
I believe in honesty, civility, generosity, practicality, and impartiality.
The perfect final fantasy VII remake would be to make it so good that it ends up as a FFVI remake. ;) That would be the best for me.

That would be good, but no auto-save. I hate auto-save, I want to progress as I like and specific save points makes it harder and more chalenging. Auto-save makes games to easy and do not allow you to load at the time and place that you want.

I think it's a useful feature, but I think it's something people should have the option to turn off, if they choose to.

-graphics rebuilt from the ground up for current generation hardware.
-return of the original, more upbeat and goofy cloud, not the dull, grim, squall 2.0 jackass square turned him into with the extended ffvii crap.
-packed with an hd remaster of crisis core.
-maybe revamp the materia system so all the characters aren't super heroes.
-Tifa's breasts as big as her head at bare minimum.
All I ask for the remake is that they remove that asinine cross dressing scene. Apart from that, improve the graphics and don't fuck up the soundtrack.
