i would say the minish cap, but the only way u can play it is a used gba game in the ds...

Hmm, for example.. The Fire Temple. That's a temple where I really didn't feel like playing anymore. The dungeon was too off for me.
A Link to the Past or Links Awakening DX would be a great start. I do not recommend the Gamecube games because I did not like both of them. Ancient Stone Tablets is the first sequel to A link to the past and can also be highly recommended: https://www.youtube.com/watch?v=rPck5S5qZqs
Imo, Link's Awakening is not a good start. It's ambitious, as they tried to emulate ALttP's gameplay on the tiny Gameboy, but it just doesn't work. That game has some serious flaws, that ultimately make it nothing more than a "decent" game.

All right then, in that case, you'll probably like the original LOZ, A Link to the Past, A Link Between Worlds, Minish Cap, Oracle of Ages/Seasons, Link's Awakening, and Phantom Hourglass. There's also Four Swords (anniversary edition occassionally available for free on 3DS eShop) and Four Swords Adventures (GC) which are also top down, but the gameplay is stripped to its very absolute basics and made into a 4 player co-op game with competitive elements. If you're just interested purely in dungeon design and want to try something 3D, Skyward Sword has the best 3D dungeons in the series, in my opinion. Minish Cap has the best top down dungeons, also my opinion, followed by A Link Between Worlds. A Link to the Past just has the best overall top down gameplay, though ALBW might top it.
