I think that people who don't think HD remasters make a good difference have never played a (well-done) remaster on the PS3. I'm talking about Shadow of the Colossus and the God of War games in particular - I assure you, the difference is really noticeable. Just makes the overral experience better.
I'm actually hoping that Nintendo will do some HD remasters. Mario Galaxy, Metroid Prime trilogy, Zelda and Xenoblade in particular just beg to be in HD. Yes, you can play the originals on the Wii U anyway, but it's still not in HD... doesn't look that good on a HDTV.
