Why limit yourself to FF10 and the 13 games? There are many FF games available on PSN, if you're interested in old-school JRPGs then I definitely recommend FF5, FF6, or FF9. Out of the ones you listed, I recommend FF10 and to be honest, you really can't go wrong with any of the mainline games.

Of the FF games released for PS3 i'd go with FFX.

Afterwards, go on the PSN store and buy FFVII, VIII, IX before trying XIII series lol

I highly recommend that you just go into PS Store and buy FF7 for PS1. You won't regret it, the graphics aren't X but the story and gameplay, exploration, music, and other things put it at the top of FF for me. But then my brother bought it when it was new, I didn't understand much English back then but I always thought the game felt so interesting.

Around five years ago I finished it for the first time, it is fantastic from start to end. There were two bosses around the middle of the game I struggled with, but eventually I beat them.

Tl;dr version: Buy Final Fantasy VII first. You won't regret it.

I won't compare it to newer installments, they're all unique in their own rights.
