Because it was all hype and no gameplay.

I notice Xbox gamers shut up about this one pretty soon after launch, and after seeing the lack if modes for it and the gameplay vids, I clearly see why.

The impression I've seen going about is the more hardcore fighting game fans love it, while the majority of others find it unremarkable (hence not much chatter about it).

call me old fashioned but I like retail games. So sure I am hyped that there is a killer instinct, but it isn't how I want it.

No gameplay really???? There are actually tons of videos of it on YouTube and a lot considering that fighting games are nowhere as popular as they used to be.
