Your theory has a problem: Sharp plans to start producing those "special" LCDs in 2016, so unless Nintendo holds its sleep tracking device for about 2 years (unlikely, don't you think?), they aren't the same thing.
But I do agree that the "Donut" shaped LCD will be for a QoL product.

Then we have another problem! :)
Iwata said Nintendo would release QoL during the 2015 fiscal year. Which means it will release between April 1st, 2015 and 31st March, 2016. If you are saying that Sharp will only start making that type of LCD in 2016, either they will start in January and Nintendo will hold releasing QoL until almost the very last day of the coming fiscal year or... it's not for QoL.
It's not like a delay can't happen. But to be honest, it's not a console that we are talking about, which always requires stuff like games. So, i can't really see them delaying something like QoL. More, their description was pretty much proof that they have a clear strategy and are ready to execute it. And we might even see it in shelves before Christmas.
If in the next investor meeting - on the 28th - Iwata confirms it's coming in the coming fiscal year, that LCD made by Sharp might have a different purpose.

I tried to find the bit of news where I read about the 2016 launch, but I couldn't find it. What I did find everywhere else is that the samples shown where in a prototype stage and that they would start mass producing them as soon as possible.
With that in mind, that 2016 that I read could have been a guess from the author of that article and Sharp could actually have them ready this year.
In any case, we'll see.

In that case then these donut shaped LCDs could indeed be for QoL.
And honestly, i just can't see it work one a handheld or gamepad, anyway.
Next week, on wednesday, Nintendo will probably talk more about QoL during the investor meeting, so we'll see if there's at least a more precise release date.
