I could play this on my step dads 360 but the 360 is out in the living room and the only time I could play these games is when I'm not busy and he is sleeping. I could just buy an old xbox on amazon.

I think PC is the way to go. You don't need a powerful machine. My Walmart PC just uses the onboard graphics chip, but it can play Jade's Empire at high quality and max resolution of my monitor (1440x900).
Also, its nice having short load times.

I say go for it :)
You could get a refurbished Xbox for around $50. And that way you can play those Xbox originals that run poorly on Xbox 360 or don't run at all.
Knights of the Old Republic and Jade Empire are two of the best RPGs of the past ten years. I highly recommend them.
The PC versions will be able to run in modern resolutions while the Xbox versions are still stuck in SD.

They actually play in Enhanced definition with component 480p really.

PC because you can get a lot of great mods for it. I played it last 6~ months ago and the game has aged quite poorly though.

Yep, but that's SD. The nice thing about PC games is as PC's get better you can run old games in higher resolutions. KOTOR on PC can now be run in 1080p HD while the Xbox version, which I own, maxes out at 480p SD even if played on Xbox 360 with backwards compatability.
I would say just get an Xbox, there are plenty of other xbox games I would suggest as well some which cannot be played on Xbox 360. Not sure about PC, but if you are not big on PC gaming then going with the console is a no brainer.
The XBOX 1 was great and so was KOTOR so I would say yes go for it! You can pick up a xbox1 for about £15
