He's not choosing to react to it, it's a sort of reaction to being startled. humans and other animals act in a certain way, although we generally don't jump so quickly as a result.

Also, I'm glad I wasn't the only one who thought "that is a beautiful cat..and LOOK AT THAT BEAUTIFUL TAIL" while watching the video... I'm not really much of a cat lover, but that was such a cute cat.
