I kind of agree with you. I wouldn't want a full-on realistic Zelda, because I agree with Nintendo in thinking that sticking close to realism can endanger the fantastical elements of the game (which I believe are just as relevant in terms of immersion). However, it's completely possible to strike a better balance between the real and etherial. Twilight Princess managed to pull it off to some extent. Maybe a slightly more vibrant color palette could preserve the character of the series while detailed environments and characters keep the game grounded firmly in reality. In any case, the SS art style did a decent job of complementing the story direction and the gameplay. Ultimately what Nintendo decides will depend on their goals, which in the case of the eventual Wii U Zelda, I hope they're interested in what the system's power can do to enhance the experience as opposed to focusing mainly on the controller aspect again.
