Is he in every game? I do not think so..

Most of them at least. Each CoD sells 20-30m so he should be more known than Master Chief, and easily Fenix.

There is quite a big difference though between being iconic and just appearing in great selling games, you know this. :P

Surprisingly for myself when i think of a video game character Sephiroth or Cloud are the first two that come to mind then Master Chief.

seriously? Marcus Fenix ?? ok Master Chief is well know but i bet you ask a non-gamer who he is they wont know. i say its mario then pikachu, 10 years ago i would have said sonic, but i wouldnt say him now

And I don't think Playstation or Xbox even have an 'iconic' character like Nintendo does. All the characters mentioned are to much genre-related.

But don't put the italian up against Disney's characters. Even now every single child around these parts has something Disney (mostly Mickey/Mini) related. Mario not so much, only when their parents used to play mario probably.
