Steins;Gate is also very good. It has some complex ideas incorporated into its plot and can get quite dark, though it does have some comedy early. It's a gripping ride that will keep you watching, once it gets going. All the conspiracy and time-paradox stuff is really interesting.
NANA is a very good drama. It's about growing into adults and all the mistakes that occur during that transition. Even though the main characters seem to be immature at times, the drama itself is as mature as you'll find in anime, as it deals with a lot of hard consequences. Things change, people screw up badly, and life goes on.

Yep, I have Kara no Kyoukai good and ready :D. I think I might just watch that next then. Is the best order to watch it in from 1 to 7?

That's the order I went with. Even if a series is released "out of order", I still watch it that way, such as with The Melancholy of Haruhi Suzumiya, as I think it makes things more interesting. Kara no Kyoukai does bounce around a bit, and you'll be slightly confused now and then, but that serves to keep you engaged.
If you want a couple more suggestions, then try Welcome to the NHK or Skip Beat. Welcome to the NHK is one of the best television series ever made, period. It deals with social and psychological problems like paranoia, depression, suicide, various addictions, and the whole downward spiral of being a NEET, but it's also absolutely and completely hilarous. The only things I can compare it to are M.A.S.H. or the Catch-22 novel, where you'll be laughing out loud one minute and feeling your heart break the next.
Skip Beat is a bit on the shoujo side, as it's about a girl who works her fingers to the bone supporting her boyfriend, who then dumps her when he gets his break in show business. It's really inspiring, though, as she never quits even when everyone and everything are trying to hold her down. She goes into show business herself, as a way to get back at her ex, which leads to her learning more about herself and her own dreams, which she had always repressed for the sake of the other people in her life.
