Well, there are technical limitations for emulating either of those consoles on the Wii... and do you really think Sony would allow PS1 games to be republished on the Wii?

Best fighter: Tekken 3
Best RPG: FF7
Best Stealth Game: MGS
Best Racing Sim: GT2
Best Arcade Racer: Wipeout/Twisted Metal/Mario Kart 64 (not as good as original)
Best Sports game: Tony Hawk's Pro Skater (if you count skateboarding as a sport)
Best Survival Horror: Resident Evil 2
Best Casual Game: Parappa the Rappa
Best 2D Game: GTA
Best FPS: Goldeneye
Best Flight Game: Star Fox 64 (not as groundbreaking as the original though)
Best Platform Game: ... platform games are sh*t.
Conclusion: PS1!!!!! It was the first console that catered to an audience of young adults, and the first console that you didn't have to hide when you brought girls home. Of course, bringing girls home would just cut into your FF7 play time, and priorities are priorities.
N64. Ocarina of Time, Super Mario 64, Mario Kart 64, Star Fox 64 were some of the greatest games of my life and I spent so much time playing them.
You didnt even mention many games for the PSone that deserve a top spot . Tekken , Resident Evil , Dino Crisis are all PSone games and they are all worthy to get a spot up there .
Genesis comes laaaaaaaast , but PSone is by far IMO the best console up there ...

Yep , especially the amazig fog that was there in every single game ... Common , saying that qualityt over quantity is pretty stupid , especially that seeing on metacritics that the N64 had 3 89% games in the top 20 , while the PSones lowest top 20 rating is 91% ... so your argue with quality fails from the start ...

Same can be told about the Mario Brawlers ... their combos are way to easy , and I dont like the garphical style ... BUT THATS MY OPINION , and seeing that your the only person that complains about Tekken or RE , means that your post is just your opinion to ... so I dont care ...
EDIT : wow , I see you have both Wii RE games ... so why do you buy them for actually ?

the n64 has got some super great games yes
but the ps1 has that also
plus many more great games
