Gunstringer and Fruit Ninja were pretty decent for Kinect - and they are bundled together.
In terms of regular games, definitely Dark Souls.

For those who like JRPGs with a good story and music, I'd recommend Nier (PS3/Xbox 360). I think it's my favourite game of the generation :P
I'd also recommend Shadows of the Damned, but someone else already recommended it :P
I don't know if stuff like Vanquish is considered "under the radar" too.. but if it is, I'd recommend it too.
Disgaea 4. Its just an excellent game that you can sink hundreds of hours into. Also Red Orchestra 2.

everyone with a DS should go out and buy ghost trick right now. Its like phoenix wright evolved into something so much better.
There are plenty of steam games I would recommend that I bought this year but frankly I'm not sure which year they came out and too lazy to check.
It was released in 2010 but I still want to recommend it, Castlevania. Also Dante's Inferno.

I watched a couple of videos and the game seems pure fun. Do you know if can be played online or co-op offline? that would be a blast.

asnd as for non 2011 under the radar games, I totally second the Nier recommendation, one of the greatest games of any gen IMO
