Starfox would be perfect for the Wii.
Wiimote to aim, a and b for bomb and lazer, joystick for steering, tilt nunchuck for doing loops, barrel rolls, and u turns, Z and C for boost and brake, 1 and 2 to change camera angles.
Heck, even if it was a straight port of the N64, it would be perfect. I've never played any of the gamecube stuff cause they kept moving away from the Jets and Tanks stuff that I enjoyed.
Zelda still needs a fully Wii designed game, the controls have to feel perfect, and it needs a wide arranged scalability to suit casual and hardcore players and add to replay value.
In the meantime, if they did nothing more than rerelease OoT and Majora's Mask with Twilight Priness controls, they would rake in such easy money. They'd have to make it so that it's an optional component that costs like 200 Wii points and you can add it onto your purchase of the games in VC
I don't think nintendogs should get a Wii release. The whole point is that you have a pet you can take with you, having it locked down to a home console would defeat the purpose.
Mario Paint NEEDS a port to Wii and there also needs to be a game designed just for the Wii, it will need to incorporate pressure sensitivity (by moving the wiimote closer to and farther away from the sensor bar), layers, and a history like what photoshop has, as well as functionality to save jpeg files to the SD card.
Pokemon doesn't necessarily need a Wii game, but what it MUST get out there is a MMORPG with rules based off of the Anime. The series and everything about it just SCREAMS this and it would make so much money that it would likely rival and possibly even dwarf WoW. It would have to be rebalanced with a different leveling and battle system to support that type of gameplay though, instead of the basic turn based battle system from the portable versions.
DS wireless multiplayer makes it perfect for a Smash Bros game. The screen isn't big enough for the camera to focus on everyone, but this isn't an issue because everyone has their own screen. If smash bros can be does for the Wii using just the Wiimote alone, it's absolutely certain that it can be done using just the buttons of the DS. One thing that is absolutely certain is that a Smash Bros DS should NOT use stylus controls for in battle.
I don't know what could be done with balloon fight, but I'd love to see something like the flash version that was created at newgrounds. I think the concept is so simple that it would be better to put it on the DS than to put it on the Wii. Excite bike could be updated as a trick/racing game, which could probably be fun.
Kid icarus would probably do excellently with an over the shoulder camera and controls similar to Zelda.
