So I've decied to sell my Xbox 360 Elite 120GB, for a Xbox 360 S. Problem is I don't want to lose my gamesaves. I don't care too much for Achievements, so is there a way I can transfer the gamesaves onto an HDD and when I get my new 360 can I put the save onto that 360?

That would require buy the new one THEN selling the old one; I think if you want to sell one first, then the best things to do is to get an external hard drive, but I am not sure how well they work with the 360

Try to use a usb to transfer the save to your computer, other than that you need to get another hdd.

The easiest is with a memory stick , since you won't have to buy a transfer cable. Unless you have tons of saves and they won't fit in your memory stick. But again you could copy your data in parts

Transfer the saves to the hard drive. Then when you get a new 360 download your gamertag then transfer over the saves. All achievements and saves should be around
