Yes Wii has the most variety.
It's lacking in a few genres, but it does absolutely dominate almost all of the rest.
Wii has the most new IPs, the most retro re-releases/re-makes/sequels (Virtual Console and stuff like the new Blaster Master and Dr. Mario on WiiWare), the most platformers, the most local multiplayer games, the most motion controlled games, the most IR-controlled games, the most balance-controlled games, the most joystick-controlled games, the most exercise games, the most dance games, the most party games, the most PS2 ports, the most PC ports, the most backwards compatibility of this gen, the most ultraviolent murder games (Manhunt 2, No More Heroes, No More Heroes 2, MadWorld), the most zombie games, the most music games, the most brain training games, the most trivia games, the most sports games, the most mini-games, the most on-rail shooters, and it's about to get the world's first zombie game that lets you kill zombies with a guitar controller.
Regarding fighters, it has the most successful fighting game of all time (Smash Bros. Brawl), Naruto games, Dragon Ball games, the exclusive TMNT Smash-Up, the exclusive Tatsunoko vs. Capcom, and the only version of Mortal Kombat to have every single MK character ever created (there's one Nintendo-exclusive MK character that's only on the N64 and the Wii). It even lets you download all the old Street Fighters and Neo Geo fighters. Wii Sports boxing and Wii Sports Resort kendo are probably more popular than any fighting game ever made now anyway. And Tournament of Legends is another exclusive fighter coming out pretty soon that looks kind of interesting and chaotic. It probably has the most exclusive fighters since the HD systems share most of their games.
Sorry for the wallotext!
