The fact that it seems to be happening with all consoles indicates that it's probably not something specific to any one of them. I think it's a lot more likely to be some kind of snafu in shipping, or possibly even a disruption in the stores' buying patterns, than an indication of any premature "new model" coming out from any of the big three.

And they would be premature. The Wii is still dominating over the industry with an iron fist, the PS3 Slim hasn't even been out for a year yet, and Natal isn't ready but is close enough that it makes more sense for Microsoft to wait for it than to do two back-to-back refreshes. It makes no sense for any of the three console makers to release a new model right now. None whatsoever.

Now that I gave it some more thought:

Sony) PS2 is going to be put back in the PS3 and Sony wants all models to have it and this will happen in Early March 2010. Since they are getting ready for the new PS3's the current ones can't be produced as much. PS2 will be canceled in Summer 2010.

Microsoft) The Arcade will get a Pricecut to $170 in Late February 2010. This will help hold back Sony until Natal is ready.

Nintendo) The Wii is just popular right now and Nintendo isn't producing as many white Wii's to get ready for the Black Wii in April 2010.

Try Amazon, I know when I bought my second ps3, it was a nightmare to find one before Christmas. I believe this is testament to how incredibly popular the slim is in everyone's eyes. Even now Best Buy has it on back order in my region (Midwest).
