The only thing I could think of with GT is that the handling differences between cars are quite exaggerated e.g. in an American muscle car, the back end slides all over the place really badly. I've never driven one so can't compare with real life, but the Honda Prelude and Ford Focus seem pretty realistic. There are a lot of driver aids that are on by default, but if you're after a simulator you can switch them off easily enough.
One other related point, is I couldn't see any equivalent to the Logitech G25 wheel for the 360. I played Forza with a decent force feedback wheel, but it was no comparison to the G25. Although I've never convinced any of my mates that GT is better than Forza, no-one has argued against the G25 :)

I don't care much for racing sims, but a while back I did check out a forum where the truly dedicated sim fans hang out. The general concensus was that Forza 2 had a better physics model than GT4. However, many still perferred GT4 overall due to support for the G25 wheel. (This was before Prologue was released.) Of course, the most respected racing sims were on the PC. (GTR 2 and rFactor.)
Honestly though, extreme realism in the physics model is not all that important in the success of these games. Fans may talk about how realistic their game of choice is, as a marketing point to try to convince fans of other games, but they care far more about is how fun the game is to play.
