A lot of people are switching from Xbox to Playstation since Microsoft basically gave up.

If that's true the PS5 would be selling a lot more than the PS4, but since the PS5 is still behind the PS4 in the same timeframe that clearly isn't the case. Yes Xbox Series isn't selling close to the Xbox One, but if those gamers jumped over to PS5 the sales would be higher. Those Xbox gamers most likely went to PC.

"over 40% of PS5 purchasers were new to the PlayStation Network (PSN) ecosystem entirely"

There is probably a large number of Xbox Gamers jumping over. Probably more moving to playstation than to PC which is a very different user experience compared to console. Emphasis on the fact that many console gamers are more of the casual kind (COD+Fifa ect)

The reason why you're not necessarily seeing a huge jump over PS4 numbers is because actual PS4 users are being slow to adopt PS5. Despite the PS5 selling 80m, almost half of sonys active userbase are still on the PS4. And some will of course move to PC instead of PS5 but just some context there.
