As I've said, the rumored RE game for Switch coming either late this year or early next could be a contender, Capcom tends to like to push graphical boundaries with the series.

The announced port of World War Z could also be a real system pusher; Saber say bringing it to Switch is one of the hardest things they've had to do, and that's coming from the team that ported Witcher 3.

I think there was a restart on Metroids development... But not sure how accurate that ingo is.

Prime 4 was restarted under Retro studios in early January 2019, so over 2 years ago now.

As far as other upcoming system pushers, there's also Apex Legends I suppose, an 8th gen battle royale game with pretty large and open levels, getting that to run on Switch in a state on par with Doom Eternal would be an admirable feat.
