As far as first-party games are concerned, probably Mario Odyssey. I don't think that game gets enough credit for how demanding it is.

Agreed on both counts.

With regards to Odyssey, attaining 60fps in an open-ended game is not an easy feat as the developer has a lot less control over what is on screen at any one time versus a more linear game, so hitting that mark in Odyssey's worlds while looking as beautiful as it does is nothing to sniff at.
