Nintendo games are never made for doing everything. They’re made to have a bunch of stuff to do so you have a lot of different ways to get from the beginning to the end of the game.
It’s kind of like Breath of the Wild.
Max upgrading a set of armour to max is fairly attainable, you can do it before finishing the game and still be having loads of fun.
Getting enough Shrines and Korok seeds is great.
Max upgrading ALL sets of armour... that’ll make you feel a little burnt out.
Getting ALL shrines will almost surely burn a person out, especially if they did that + maxing out all sets of armour.
Getting ALL Korok seeds will probably make a player hate the game, and never want to play it again.
I think if you finish the game in a reasonable way, then the second play through in hard mode (or easy again) is going to be FAR more appealing and satisfying. And multiple playthroughs is much more fun and satisfying than one really long over-playthrough.
I describe myself as a little dose of toxic masculinity.
