Bioware and Bethesda aren't good examples to use because they use inhouse engines and large development teams and they aren't making that many new IPs if any at all.
In fact, if they want to remake it without changes to gameplay, they might not be able to use their avalible engines to remake it, nit to mention the teams are working on other projects.
FFXV has been in dev for 7+ years and KHIII has a dedicated fanbase of KH, SE thinks they can make more money with XIII and XIV
