For the very first picture, I could see a good shooter where all you really need is the joystick on the nunchuck to move around, you could use nunchuck guestures to reload and for action commands like open door, c and z could be used to use alternate weapons or some other feature.
Also, I obviously don't know the protocol for the adapter on the end of the wiimote, but it is possible that it could support more than 1 device attached, so the gun itself could have extra buttons, so you could have 2-3 more buttons on the handle itself. and that would be so cool.
