I think you're missing the point, if you don't mind me saying.
First, who plays with the GamePad? Wiimote is the only way to go, here.
Next, the days are supposed to be short (and 15 minutes isn't that bad). It's always been the case, to encourage multitasking and foreplanning. Without this time constraint, the game would be a shadow of what it is.
The bosses, I will give you, feel out of place. But there's only a few. So they don't detract from the overall experience.

They don´t ship the Wii U with the Wii-Mote do they? So if you don´t have a Wii-Mote anymore you must play with the Gamepad or on it.
Yeah the thing with Multitasking don´ t work all that great because none of the tasks take all that long that have to constantly miltitask with all 3 protagonists. A co-op mode would be perfect for this game.
I mean I still liked it a lot and gave an 8.5/10 but there is so much potential to make it great.
