Sadly with all the firefighting, Nintendo doesn't have the time to exert the proper judgement regarding the art direction of most of their games. They need to use weaker teams to complete some of their projects because they are carrying their consoles all by themselves.
So for the next few years, we will have to deal with this lack of quality until these teams grow to become great in and of themselves, and Nintendo can hire more proper artists to judge on these pretty obvious matters.
