Anyways, you already know the answer you're looking for. Will there be enough demand to price gouge? Yes. It's coming out near Christmas and it's completely sold out. Will you personally have a shot at selling it for a high price? That comes down to how many other people are doing the same thing and how lucky you are at nabbing one of the people willing to pay a higher price.
In the end, none of this actually matters though. Why? Because you are taking zero risk in this entire venture. If you don't find a buyer, simply return the Wii U to the store you got it from within the return limit. You have nothing (monetarily speaking) to lose here by trying.
