Watch the video from the source. It showed Marvel vs Capcom, which lets you use your Vita as an "optimized" controller.
Being able to remotely access your console is just one of the features, and it has been done ages ago on other devices such as the PC (didn't the PSP already do this?). But adding a second screen to your setup adds another input/output to the game. It can be a asymmetric, coop/vs, map, inventory, zoomed image... whatever you can think of. Look at the DS or the WiiU demo's for more examples.
