Dobly Pro Logic is a surround sound processing techology designed to decode soundtracks encoded with Dolby Surround.

If I'm not mistaken, the sound is always encoded more or less the same way - with the matrix-encoding of Dolby Surround. Then, the Dolby Pro Logic decoder can recovers the surround sound. Dolby Pro Logic decoders decode Dolby Surround into 4.0 sound, Dolby Pro Logic II decoders decode/upmix that to 5.1, and Dolby Pro Logic IIx decoders to 6.1 or 7.1.

Dolby Pro Logic technology is mostly on the decoder (your receiver) and not on the encoder (the Wii). If your receiver supports Dolby Pro Logic IIx, you'll get 6.1 or 7.1 sound. Dolby Digital, that's another story.
