Expect companies to start trying to replicate the Vitality Sensor, but if Nintendo showed it, must mean they already have something. Probably they have the games running already, but don't want to lose the momentum created by Wii Fit and Wii Sports, so they are saving it for next year's E3 along with Zelda. If by any chance any company announces something similar to the sensor, then Nintendo will immediately come out and show the vitality sensor with a close launch date. They have all holes covered, there's no taking them by surprise this gen. Great strategy.
