I don't think it would ultimately mattered. Especially if Ubisoft insisted on a simultaneous release. The 360 version of the game would have most likely made it out by the holiday season otherwise, but it would have faced off against far superior games and likely failed.
The PS3 version would have likely had lower sales as the word would been out on the game from the 360 version's reviews. The total sales of the Haze between the two platforms probably wouldn't be much more than the PS3 only sales. I know didn't mention the PC version but if the 360 version got crushed due to superior competition the situation would have been even worse on the PC.
