This might be a spoiler in a way, but here is a list of some of the more common sanity effects (I haven't seen half of these myself.... I kept myself too sane, I'll have to play again and keep the sanity level low)

you missed my favorites

• A shadow of a fly crawling across the screen. It got me to get up and brush it off at least 2-3 times before I relized it was fake
• the game displays the standard disc read error message for the GC. I almost shut my system off
