I get all your points, those sort of games were like a fad, but I believe Wii Fit was a little bit different, because Wii Fit is a true fitness app and I'd say an excellent one.
Most fitness apps don't do what Wii Fit does. Wii Fit measures your weight (with balance board), it lets you know about your posture and shows if you're doing the exercise correctly. The fit meter is very precise, it counts your steps, it shows calories, speed, altitude, pressor and it connects to your Wii Fit and it all gives you the right plan to lose weight, because it's all conected.
I understand that we don't need the fit meter if we have smartphones, since they can do the same. But smartphones can't do what balance board does. I don't know if there's a balance board device for smartphones but the Wii one is really precise and the exercises are very well done. Besides you don't have to pay for subscription for Wii Fit, you just buy it and you have an extraordinary fitness app that do much more stuff than fitness apps for smartphone does.
Perhaps a Switch Fit wouldn't sell a lot, but it's still a great product. It's more than a game, it really makes you fit, makes you lose weight and correct your posture in a fun way.
