These trees are common in sims since they allow better framerate with higher resolution especially when tracks has a lot of trees. There are some videos of gt5 appears to have 3d trees close to the track. These trees no doubt helps keep GT5 framerate running 60 fps.

The car is the Ferrari 458 Italia and the track could be SS11. Not 100% sure as it could be a new track/version of the SS tracks in previous GTs.

You can select from 4 locations, i can't remember exactly what they are. The course creator then randomly generates the course and you select number of corners and how tight they will be and this is broken up into 4 sectors. Well thats my understanding of it anyway... it actually sounds pretty damn cool to me.
Pretty sure custom courses can be saved and shared online too.

Yup the custom tracks you make can be saved, shared and raced both offline and online.
