The main quests of RPG are easy but its usually all the side quest that contain the difficulty. But any difficulty can become pointless with a good trigger finger (ARPG) or a good strategy (SRPGs, and turn based).

I don't think this is a problem specific to rpgs.  I believe that all games lack difficulty nowadays.  They don't make them like they used to in the nes, sega genesis, and super nes, days

Are we talking just JRPGs or WRPGs too?

Because their are plenty of WRPGs where the difficulty is still quite high. Try playing Dragon Age: Origins on the highest difficulty, or maybe The Witcher where its all about prep and making and taking the right potions for each fight.

Also, Demons Souls on PS3 is supposedly very difficult. Haven't played it, but it has that reputation.

EDIT: to people saying FF IV was hard, it came across as pretty easy to me, I think I got a game over once, maybe twice
