Would Gerudo Fortress also count the separate but optional Training Grounds portion with the Ice Arrows? Because if not, we may be up to 13...

Damn, yo... I forgot about that one.
I think Gerudo Fortress is a bit of a stretch, but I don't know that Ganon's Tower and the Gerudo Training Grounds shouldn't be counted as dungeons - dungeon map rule be damned.
According to Mr. ANOUMA MM, WW an TP are similar to an OOT remake so you can count every dungeons from them too come guys GO PLAY SIPRIT TRACKS THERE ARE REAL DUNGEONS IN THERE ! I SWEAR GOD YOU WON'T BE DISOPPOINTED BY ALL WHAT YOU CAN FIND IN IT.

Well, there's also the Temple of Time. That one HAS to count as a temple. I mean, TEMPLE of Time.

Ok, so I'm thinking four components make a dungeon.
1). You receive a dungeon map (I think this unequivocally determine if it's a dungeon the most)
2). You receive a new toy (ex: Bow, magic arrow, boomerang, new pair of kicks, etc.)
3). You receive a boss key and fight a boss.
4). You receive a quest item (ie. free a maiden, receive a medallion, precious stone, etc.)
I think each successive item becomes less important in determining dungeon eligibility - but more than two items on the list makes any ambiguous dungeon and official dungeon. All dungeons won't have boss fights - that's ok. All dungeons won't have a quest item at the end - which is fine too. But you usually ALWAYS get a new toy. So, Ganon's Tower has two items (#2 and #3). So maybe we should count after all. Of course, some dungeons will have all four components and some may just have any two.
Granted, this is all totally arbitrary, but I'm wondering you guys think.
I consider the entire game to be one big dungeon.

Good points. Imo, there are 'official' dungeons, that would satisfy the conditions you mentioned. Stuff like the Forest and Fire Temple.
Then there are 'lesser' dungeons, that are typically smaller in scale, and may or may not see you face off against a boss at the end, and in which you'll usually find a new item (quest item, weapon, whatever...). Examples of those would be the Ice Cavern, Ganon's Tower and Bottom of the Well.
And finally, there's a last category of 'dungeons', if they can be called as much, that are smaller still in scale, contain a miniboss as often as not, and usually see you battle some monsters and/or solve one or a few puzzles. That would be stuff like the Gerudo's Training Ground.
Just my opinion.

Agreed. But one thing though...
I think I may need to add a fifth component. Gerudo Training Ground wouldn't count with those four and I think I overlooked a dungeon staple:
5). You received dungeon keys to unlock doors ("You found a small key! This key can only be used in this dungeon!")
You have a point about miniboss battles too. I'd say it only counts as a miniboss if "Middle Boss Battle" background music plays during the fight.
