Well, having simple means drives people to do more with what they have, I guess? I haven't noticed game music (with a few exceptions) much since the PS1 days.

FFVII



FF8 of course. I feel that was the strongest entry into the series. Unfortunately also the most unintuitive, a lot of people draw too much and complain that it is boring powering up their characters, and never seem to wonder what all of those hundreds of extra items and refine abilities are for.

I would have said FF6, but I would prefer a DS remake of that one.

FF7 would be my third choice since that game is in dire need of a facelift; also lower times in loading and animations.
