No proof, it's never been done before (except incidentally by DDR/Wii Sports), but 51% of Wii owners are women, a lot of them are mature gamers, and than % is sure to grow with Wii Fit. It will not appeal to core gamers, but it will appeal to women/mature people, and anyone else wanting to lose weight without bothering to exercise.
In Japanese the population is aging, and this will be very popular. In NA the population is overweight (in general) and this will be very popular. Europeans are more casual gamers anyways so this will also appeal to them.
It's experimental, so like the Wii was originally perdicted, it could be a flop, or like the Wii has turned out, it could be a huge success. I choose the latter.

There's part of your answer right there. The main target isn't the general gaming public. The proof that it will sell is... uhm... it's a first party game. We all know the first party games on the Wii are the ones that sell.
OT: It's a shame that third party games don't sell on the Wii. I've heard that all of the publishers are putting out shovelware on the Wii to fund the development for the PS3/360 games. But if the shovelware isn't selling there won't be any development monies for the PS3/360.
i think i will go over really well---and like azzer said if oprah even so much as mentions it--soccer mom will be all over it

Hrmm...
I hope it fails, just so Nintendo can go make a good Donkey Kong or Starfox game.

I hope it succeeds so I don't have to listen to a certain group of fanboys shouting "It's teh DOOOOOOM fOR teh Wii!!!!1one"
i hope they drop GC BC to cut price even more, so that a $250 Wii+WiiFit package becomes possible.
few if anybody takes advantage of GC BC anyway, especially for people who buy WiiFit.
the Wii is an epidemic.
