I really loved Double Dash too. Me and a friend would do the all cup circuit with me driving and him being my weapon man, and he would punch every single other driver. We'd mostly play 2 on 2s, and have LAN parties with 2v2v2v2 races or 1v1v1v1v1v1v1v1 style battle mode. I too miss mixing and matching specials (although I'd always go Daisy/Toadette), but I'm still super pumped about motorcycles, the new control scheme, and 12 player online racing AND ONLINE BATTLE MODE for the first time ever.
I don't know. I just can't dislike a Mario Kart. They're all just different flavors of perfection to me.

I just hope theres an option for the 'Cube controller because I cant see myself steering a motorbike with a Wii-mote.
I think the motorbike are for the good. just hope they balance them... they maybe faster but maybe easier to bump or something
