I have to admit all on 1 disk is great but i wouldnt mind 3-4 disks either did it back on ps1 with FF7, FF8 so for me its not a problem.

I like having more discs I mean then you won't be surprised when the game ends suddenly 
If it isn't turnbased it isn't worth playing

Given the choice I'd rather have everything on one disc if possible but if I had FFXIII on the 360 I really wouldn't care how many discs it was on.

See, I never thought disc swapping was an issue. Back in PS2 days, my only real annoyance with gaming was long load times.. a problem that I looked forward to disappearing some day. (Though, to be fair, most Xbox and Game Cube games didn't have long load times even back then)
Apparently though, taking 10-15 seconds 2-3 times over the course of 70 hours of play is a massive time waste on par with travelling down dirt roads at 10mph, whereas waiting 10-15 extra seconds several times per HOUR of play for loads is technology at its finest. (And exponentially more for some PS3 titles)
the physical act of disk swapping - not such a big deal.
however - when it effects game design it kind of is a big deal. this probably mostly affects open world designs but the developer has a choice: make you open world smaller or split it into various selection (such as islands) and avoid moving between the sub sections too frequently.
the 360's dvd isn't really that small but it still forces a design limitation. it's just kind of nice to know that this kind of limit doesn't have to be taken into consideration with ps3 exclusive games.
then again, imagine the games were on CDs and you had to swap the disk 100+ times. wow that would be horrible imo. it's all relative.
It's a well-known fact that getting up to swap discs builds your muscles.

I would never manage to play a game like FFXII with multiple discs. Go to place X *swap disc* then to place Y *swap discs* then to place Z *swap discs again* God damn, I can't even imagine the horror :P
Until you play Star Ocean 4 do NOT, EVER try to defend disc swapping...EVER.
