You should just play through it on your 360 copy. You already bought the game, so why not.
Besides the PS3 version probably won't make it to the west until sometime in 2010. If you like you could always buy the game again (PS3 version) if you really like ToV and want to experience the extra content.

As usual, there will be no meaningful graphical difference at all (feel free to check in a game shop, I did with some games, multiplats are identical, which is normal since that was the developer's goal).
What is sure though is there will be more quests, more playable characters, more everything on the PS3 version...
