I think the problem has more to do with the fact that you don't have the extra stability of a two-handed grip like with conventional game pads. I see my sister struggle with this as her thumb actually shoves the nunchuk out of her grip while she uses the thumbstick. The nunchuk doesn't bother me at all, personally.
I think Nyko's wireless nunchuck is bigger than an ordinary one, due to it needing its own battery. Expensive, but you get the added bonus of getting rid of that garrote wire. Might be worth looking into. Especially if you're like me and the cable between the wiimote and nunchuk gives you strange urges to strangle yourself or others.

I can honestly say I don't have that problem at all. I could see it being a problem if I had bigger hands.
It's just somewhat oddly shaped. You get used to it after time but at first it's frustrating.

I regularly see silicon grip sleeve things for nunchuks in the shops. Not official Nintendo ones, but they're reasonably priced
Why use two fingers for the buttons? You only use your thumb for 4 Buttons on the PS3....
Just use your index finger for button work and the middle finger to hold.

You must have pretty big hands. I don't so i've never had a problem but actually i wouldn't mind if the nunchuk was slightly heavier.
i have been having this same issue. And oddly enough it is with the same game! I was planning on wrapping some tape around it to see if it would help at all.
