For fantastic single player experiences I'd say the following 5:
- Resident Evil 4 (I know you said the RE games aren't your bag, but get it! It's great!)
- Metroid Prime (This is without question a must-have)
- Eternal Darkness (A unique, hidden gem in the Gamecube library)
- Fire Emblem Path of Radiance (If you play this game then make sure you play its sequel when/if you get a wii - they work really well as a two)
- Pikmin 2
Mario and Zelda are obvious, so I left them out. You might also want to check out F-zero GX if you like racing games.

I think I'll get RE4, I hear it's one of the best GC games.
I have Metroid Prime 1 and 2 now, and Super Mario Sunshine. That will hold me for a while but then I'm gonna be looking at SSBM, RE4, and Windwaker. The RPG's would take up too much time to get first haha.
Viewtiful Joe 1 and 2
Metal Gear Solid remake
Beach Spikers
You might want to give Eternal Darkness a try, allthough its playmechanics might feel really outdated nowadays
@ OP... do you have or are you planning on buying a Wii? Prolly be better off going that route instead of wasing like $50 on a used GC, and then u can just pick up controllers and memory cards on the cheap (you can't save GC games without GC memory cards).
Anyway... Eternal Darkness, Pikmin, Rogue Squadron 2 and 3, Metroid Prime, Zelda Wind Waker, RE4 (or Wii Edition if you get the Wii), Viewtiful Joe, F-Zero GX, Monkey Ball 2 (awesome party game) and many more!

You know I was always wondering why no one ever used the dollar sign for $ony, but then I realized they have no money so it would be pointless.
@NightDragon
Not for a while, no. I already bought a GameCube (W/2 controllers) yesterday with a few games for $45 :).
-Super Smash Bros. Melee
-The Legend of Zelda: Wind Waker
-The Legend of Zelda: Twilight Princess
-Resident Evil 4
-Mario Kart Double Dash!!
And others that I don't have:
-Paper Mario: The Thousand Year Door
-Metroid Prime
-Eternal Darkness
-F Zero GX
-Super Mario Sunshine

Star Wars Bounty Hunter is one that I've really enjoyed playing. I into all Star Wars stuff though so I find enjoyment with all those games, cheezy or not. Another I didn't see mentioned was Geist (I think it's german for ghost). This was a cool game to play and completely enjoyable. I have about 50+ GC games that I haven't even played through them all yet so I enjoy loading those up and playing still. I still play N64 games when I come across them cheap and in good shape. Having fun with Turok and got it from EB Games when they were going out of business. It cost me 50 cents. Grabbed a few more games at that price too. Hope you have fun on your GameCube adventure. I know I still enjoy playing those games. I'm not a graphics whore. Just like fun games. So systems or current gen just don't make a difference to me. Just as long as it's fun. Check out my profile if you want to see the GC collection I have. I'm updating it this weekend so I can see everything at a glance via this site instead of having to dig through shelves to see if I have something. lol
Consoles owned: NES, N64, PS1, GC, PS2, Wii.
